By now, I feel that I've definitely gained a healthy obsession with rice bowls, otherwise known as grain bowls. What started as an affinity for something that reminded me of a deconstructed taco complete with brown rice, black beans, steak, avocado, and occassionally some shredded cheese, has quickly evolved into rice-base anything.
Lately, my fix of choice has been the sweet potato grain bowl.
I don't naturally love sweet potatoes, so when I find a rendition or a recipe including it that I like, I visit it and visit it again. For example, even though I'm not too into sweet potato fries, I could eat plates upon plates of sweet potato and turkey hash. Excuse me while I salivate.
Joining the sweet potato and the brown rice for grain bowl goodness are some garbanzo beans, spinach, and an egg. The creaminess of the runny yolk is the icing on the cake. The final result culminates as a healthyish, filling, aesthetically pleasing meal.
What more could a foodie ask for?
